Ultimate Tater Salad

1/2 pound red potatoes, diced
2/3 cup veganaise
2 tbs yellow mustard
3 tbs dill (dried or fresh minced)
1/4 cup Apple Cider Vinegar
2/3 cup chopped celery
1/4 cup chopped red or white onio
1/4 cup chopped green onion (stalks and bulb)
1 tsp lemon juice
1 tsp salt
1/2 tsp black pepper




Boil potatoes for about 25 minutes or until they are soft. Dice into small chunks, leaving the skin on. Mix in celery, onion, and green onion. Add vinegar, veganaise, mustard, lemon juice, dill, salt, pepper, and stir to coat. Chill and serve.
